It is a great go to for chips and salsa! Or, you can mix the salsa with hot steamed rice and serve with black beans and corn for a hearty, tasty meal.
Here is the recipe:
2 lbs ripe plum tomatoes
3 cloves garlic, minced
1 large red onion, diced
2-3 Serrano chilies, minced
1/2 cup coarsely chopped fresh cilantro
1 teaspoon dried oregano
Splash of balsamic vinegar
1 pinch of salt
Extra virgin olive oil
Over an open flame grill and char the tomatoes on all sides. Place them in a medium bowl and set aside to cool.
Peel and core the tomatoes, Place tomatoes and their juices in a food processor and pulse to a coarse purée. Pour the purée into a medium sized bowl. Add the garlic, onion, chilies, cilantro, and oregano and toss until well combined. Season to taste with vinegar and salt. Set aside for 20 minutes for the flavors to mingle, then taste and adjust seasoning. Drizzle with a little olive oil, stir and serve.
